Social Science Perspectives on Food Choice
The one semester course called Social Science Perspectives on Food and Nutrition (NS 2450) is taught annually by Carole Biosogni and Jeffrey Sobal. This course uses theories, concepts and methods from the social sciences to examine food, eating, and nutrition. The food choice process model is used as a conceptual framework for examining the scope of social science aspects of nutrition. An important objective of the course is to expand student's perceptions about food and eating to begin to understand the constructions and perceptions that other individuals use in food choice. Students complete research qualitative and quantitative assignments to better understand the personal constructions related to food choice.
